INGREDIENTS
- 2 lbs. Chuck Roast
- 2 lbs. Ground Beef
- 2 lbs. Sweet Italian Sausage
- 1 cup chicken broth
- 2 Tbsp olive oil
- 2 jalapeno peppers
- 1/2 bag sweet peppers
- 1 8 oz can chilis
- 2 medium onions
- 4 Tbsp minced garlic
- 3 Tbsp chili powder
- 2 tsp cumin
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp salt
- 2 tsp black pepper
- 2 10 oz cans tomato sauce
- 1 8 oz can tomato paste
- 2 15 oz cans diced tomatos
- 2 15 oz cans kidney beans
- 2 15 oz cans black beans
- 1 can beer (your favorite)
INSTRUCTIONS
- Put chuck roast in the crockpot on high with 1 cup of chicken broth for 2 hours
- Chop jalapeno peppers, sweet peppers, chilis, onions and saute with olive oil and minced garlic
- Brown ground beef and sweet Italian sausage
- Take chuck roast out of crockpot and cut into small cubes
- Combine the meats and peppers with 1 cup of the juices from the chuck roast in a large stock pot
- Stir in the spices, tomato sauce, tomato paste, diced tomatoes, beans and beer
- Cook on low for 2.5 hours, stirring often
